Balsamic Chicken and Asparagus

This recipe is my new favorite… that’s why it is the first one I am going to share with you.  It was so easy to make and even easier to eat.

Balsamic Chicken and Asparagus

I found this off of Pinterest… the picture was pretty, then I read the recipe…. so easy!  The website is from “Maggie’s Bites” (You can click her name to go to her website).  This is the only recipe I have done so far but am willing to try more!

Check the ingredients… there aren’t many.

2 boneless skinless chicken breasts (6 oz each)
1 bunch asparagus
1 pint grape tomatoes
4 oz mozzarella cheese
1/2 cup plus 2 Tb balsamic vinegar
1/4 cup plus 1 t olive oil
1/2 teaspoon garlic powder
1/4 teaspoon pepper

Directions are just as easy…

1. Combine 1/2 balsamic, 1/4 olive oil, garlic powder and pepper into a ziploc bag. Add in raw chicken breasts and marinate from 30 minutes to overnight. After marinating, grill chicken. (I got crazy and added a little lime juice to it… was a nice add).

2. Preheat oven to 400 degrees. Cut off the end of asparagus (bend asparagus until it breaks, this is where you should be cutting off the ends). Line a cookie sheet with tinfoil. Line asparagus on the cookie sheet and drizzle with olive oil. Sprinkle with salt (I used Sea Salt). Place on top rack of oven for 8-10 minutes until tender (until you can easily pierce with a fork).

3. In a frying pan, place sliced grape tomatoes in 1 teaspoon olive oil and 2 tablespoons balsamic vinegar. Cook for a few minutes until tomatoes start to get soft (where you can squish them with a fork).

4. Place chicken and asparagus on a serving dish, top with tomatoes and mozzarella. Drizzle with extra balsamic mixture from tomatoes.

The kicker.. this is only 335 Calories!  WOOHOO  Delicious, easy, and healthy!

Recipes to Come…

I love to cook, but like you, I don’t have a lot of time to dedicate to it.  I have found some simple recipes that are healthy (I know, crazy right) and DELICIOUS!

I get my recipes from my cookbooks, a few websites, and a very talented Mom (Thanks Mom)!  Now recipes to me are NOT set in stone.  Recipes are simply a guideline to be played with.  What does this even mean?  It means that if I don’t have something in the recipe I make it up.  🙂  That’s how I roll… 98% of the time it turns out great!

For you, I will be posting some of my favorite simple recipes to make and how I serve them up.  Sometimes I will even post the “I refuse to cook but don’t want to go out” dinners for you.  Those are quite delicious (no, they are not but they are edible).

The boots are made for Rain!

This summer it rained and rained and rained here on GA. I could not find rain boots anywhere. Finally I found a pair online that will keep my feet dry and look cute too. It’s the simple finds in life that make me smile. Let it rain!!!

I admit that this used to be me. Laziness and boredom often become good friends with Anxiety. Eating kept these friends close. Breaking up is hard to do but it’s a must. Get out of that rut. Take a walk!!!

I believe I can Fly

My youngest flew for the very first time this weekend. I admit that I was a nervous wreck! It was a packed plane and I didn’t know how it was going to be. The fear of the known can paralyze us. Fear allows doubt to creep in and can squash your good time. In my past, I would have allowed fear to win. I have taken trips in the past that were amazing trips only to find myself miserable, unwell, not eating, and wishing I had never come because of this fear. The fears are very real, but the chances of them happening are so ridiculously slim that it truly is a waste of time to focus on the fear. Still, my fears paralyzed me and I missed out on joy.

I had to learn to trust God. It’s easier said than done. Being human and all, I like to think I have everything under control. I am a control freak. I work very hard to keep things under control. I research every self help book, google all things related to Anxiety, ADHD, adoption, etc., make charts, plan, discuss, implement, then burn. I worry so much about life and what may come of it that I am missing it. Let me rephrase that, I WAS missing it. I was making things very complicated!

When my dearest husband suggested we fly to Disney I thought he was nuts. I later realized that if I was ever going to know how B did flying, what better way to find out than to promise Mickey Mouse at the end of the trip! I was prepared for a meltdown. I was prepared for the evil looks from the other passengers. I hoped for a great time.

My fear kept him from experiencing something as cool as flying in a plane. My fears kept us from visiting different parts of the country that were too far to drive. My fears kept us from Italy, France, Brazil, etc. Well, school played a part too. Not sure why my dearest can’t travel to these beautiful places while the kids are out of school, but that’s another topic for another day.

I have been confronting my fears for a few months now. I have spoken about them before because who I am today is so different than who I was. I am excited about it. I contribute it to my faith and actually living it out, supportive friends, my intentional quest to find natural alternatives for my health and my family’s health, and a doctor who wasn’t afraid to share with me scripture and her natural way of coping. I made it simple. I let go.

Through my essential oils I feel I have immediate control over my emotions. I don’t have to “wait it out”. I don’t have to “see what happens” or allow it to get out of hand. I immediately take control over the situation (see above paragraphs referencing myself as a control freak). It’s freeing. I have zero control over life but have 100% control over how I deal with it. Finally, I GET IT!

If you are stuck in a spot in life feeling as if you can’t get control over your emotions, please get help. Please find your supportive friends and find your faith. Also, consider essential oils to help with anxiety. Lavender, Serenity blend, and Balance blend are a few I use. It’s a lot cheaper than a doctor’s visit and prescription. It also has zero side effects. You can be free again! I promise. Just like me, you will be able to fly again.

Remember the dreams you had as a kid? It’s never too late to chase them if they are still a real option. Mine isn’t, my knees didn’t cooperate with my dream of being a Rockette. My dreams changed and I am still chasing them!
